The kitchen is headed up by Paul Pairet and has three Michelin stars. The restaurant only has one table, however, that table can have a total of 10 people. For $900, you can expect to enjoy a 20-course tasting menu with each course highlighting different ingredients and presented in the most innovative ways. And as seems to be a growing trend with some high-end eateries, there is an all-over sensory experience offered at Ultraviolet, using audio and visual effects that all play in the background as you eat. This was the first restaurant of its kind (opened in 2012) to unite food with multi-sensory technology to create an immersive dining experience. While the menu is strongly influenced by traditional French cuisine, guests are taken on a journey around the world through a variety of dishes. There is a playful element of surprise as you dineā€”all of a sudden, the French national anthem sung in Japanese is played as a sashimi dish is presented! Ultraviolet only serves the best meat, vegetables, and seafood available.
